5 Ideas for a Quick, Easy AND Healthy Breakfast

Breakfast is the most important meal of the day. Or so we’ve been told. But breakfast can be…. let’s just say tricky.

I mean, if you are anything like me, you wake up half an hour later than planned (or more) after hitting the snooze button several times and you literally have to race out the door on a weekday morning.

Maybe you’ve been able to grab some coffee and toast/pastry on the way out. Or maybe you’ve quickly tucked into cereal before you sped out the door. I know many of us, just skip it altogether and end-up having that late morning “snack”, to keep us going.

Breakfast gets sidelined. 

The most important meal of the day becomes a rushed meal on the go or quick thoughtless bite with as much nutritional content as cardboard (if your lucky, lol).

Yes, the importance of breakfast can be argued. Some people do well on intermittent fasting plans where you eat within an eating window. This can be great if you are someone who can’t stomach food in the morning or if you a really focused eater. But be honest, is that really you though?

I love food and I believe many of us are doing disservice to breakfast and ourselves (insert disappointed GIF here) .

It’s shame really. 

No, I’m not saying breakfast has to Instagram worthy smoothie bowl or trendy hipster deconstructed dish. (Don’t even get me started on that topic) But let’s show breakfast some much needed love.

Let’s banish boring beige breakfast and calorie dense unhealthy items from our menus! It’s time to bring some colour, fresh flavours, nutrients to our breakfast bowls! Even better yet, let’s make it quick, easy and convenient.

Here are a few top tips which will make brekkie easier:

1. Meal Prep

I know, I know… It’s not groundbreaking at all but hear me out – If you’re not a morning person, it’s hard to do anything in the morning.
It’s hard to wake up. It’s hard to get-up. It’s hard move, get dressed, leave the house (I could continue forever here). Therefore the least amount of time  organising yourself in the morning, the better.

I’m not proposing you do the epic meal preps like the one you see on YT on Insta where there are ALL the meals and snack for the week prepped (in the chicest and vastest Tupperware collection you’ve ever seen).  But maybe just start by prepping tomorrows or the next couple day breakfast. Wash, chop, precook and package your breakfast. Do whatever you need for breakfast the night before so all you need to do is pickup, reheat and eat it.

2. Breakfast in 10 minute or less

Making something healthy doesn’t have to long-winded at all. It is possible to get breakfast made in the same time it would take to queue, order and receive your Starbucks coffee. The microwave and the blender will be your best friend when it comes to quickly preparing breakfast. Plus there are loads of fresh recipe you can pull together sharpish.

Eggs can be scrambled, poached and made in to omelette in less than 10 minutes in the microwave. Smoothies can be blended to perfection in less than 10 minutes.  Yogurt bowls with fresh fruit & granola can be flung together in a matter of minutes. And those are just a few options to explore

3. Leftovers for breakfast

I love leftovers. Leftovers are basically like ready-meals you’ve made. There are time when I love cooking and prepping BUT there are times when I cannot be asked to even open the fridge door. Enter leftovers, granted I may have to open the fridge door to access them but my point is most of the works been done.

AND the leftovers don’t have to “breakfasty” either. Culturally we have conditioned to believe that certain foods are for breakfast but as long as you can stomach a meal or recipe in the morning it can be breakfast.

Dinners that double up as delicious breakfasts:
– Leftover meats into omelette or scrambled eggs
– Frittata & Quiche
– Steak & Eggs
– Vegetable Hash
– Shakshouka

4. Slow cooker breakfast

The slow cooker is fantastic kitchen appliance;for a lot of recipes you can literally dump your ingredients in, set the timer and walk away. This is perfect for convenience queens like myself. No need to keep an eye on the frying pan, pot or grill; just dump, exit and return to a completed meal. This is laziness perfected.

So you didn’t get to prepping/cooking breakfast last night or this morning. Perhaps you really didn’t have time to or you really couldn’t be asked (life is just hard enough sometimes) – there are some great on the go food options as well. So you could grab that muffin/pastry/toastie on the run but you could equally grab something healthier: –
